Stir Fry Egg n Tomato


Simple, delicious n quick dish. My girl had 2 helpings of it!

I can't tell you if it is asian or western dish  because it is enjoyed by many people.

Recipe
4 eggs beaten
2 small tomatoes diced
Sprinkle of salt
2 sachets of tomato ketchup
1 tablespoon of brown sugar
Some oil

Method 
Heat the wok with about 1 tablespoon oil.
Turn the fire to low .
Pour in the eggs.
Let the eggs cook slightly n start to set around the edges.
Start to stir the eggs with a to n fro action with your spatula.
Add the tomatoes, sugar n salt.
Continue to stir them around with egg till eggs look less wet n cooked.
Add in the ketchup n mix a bit.
Dish up and put a bit of coriander as decoration.
It is good enough to eat on its own or eat with a bowl of fragrant rice.

Crispy skin chicken


Now I know hiw the crispy skin comes about and it is really easy to cook.

The recipe sones from Allrecipes but I used a different bottle of herbs to marinate the chicken 

Recipe
3 pcs of chicken - you can use 2 pcs of thigh and 1 drumstick
Some olive oil
Some dried herbs - I used The Gourmet Collection - Oregano, Basil & Tomato spice blend 
A bit of salt
Some Masterfoods garlic powder
3 potatoes washed and quartered into wedges
Cherry tomatoes

Method
Wash n pat dry your chicken and place in a large bowl 
Add in the potatoes 
Drizzle olive oil n stir to coat
Add in enough mixed herbs (about 1 tablespoon) n garlic powder(about 1 teaspoon) n a little salt
Put some aluminum foil on your baking pan
Place the chicken n potatos on the tray
Preheat oven to 190 deg celcius
Bake for 45 minutes
No need to turn them to achieve crispy skin
At 40th minutes, throw in some cherry tomatoes n bake together
Remove and serve

Banana and dessicated coconut cake


One of my favourite bakes is the banana cake.This time I have adjusted by adding in 1/2 cup of dessicated coconut and topped with sliced bananas n slices of cheese.

Again I have used the basic Banana Bread recipe from Simplyrecipes.com.



Recipe 
2 very ripe bananas - I used Dole
You can use up to 3
I used 1/3 cup melted salted butter instead so you can omit the salt ( sprinkle of sakt)
1 teaspoon vanilla extract
1 beaten egg
3/4 cup caster sugar 
1 teaspoon baking soda 
1/2 cup dessicated coconut
8 slices of firm banana
1/2 slice of cheese cut into 8

Method
Spray or grease your loaf pan 4 by 8 inches
Set oven to 175 degree celcius
Mash the bananas into a medium mixing bowl
Mix in the melted butter 
Add in the baking soda n mix in
Add in the egg, sugar, vanilla extract n mix in with your fork
Add in 1 and 1/2 cups of flour with 1/2 cup dessicated coconut
Mix the batter n pour into the loaf pan
Arrange the sliced bananas on top n place the cheese on the bananas
Bake for 30 mins n turn down temp to 160 and bake 10 mins
Turn out the cake onto the cooling rack 
Cut when cool

Pineapple Tart



Tart is one item that I find quite difficult to do because of the pie crust. I think I have finally found the right recipe for the crust.

Today I attempted this pineapple tart using fresh pineapple.


First remove the skin of the pineapple n the eyes. Cut into round slices.
You will only need about 1-2 pcs n cut the pineapple into small chunks. Set aside. Keep the rest of the pineapple in a container n store in the fridge.


Alternatively you can also purchase a slice from the fresh fruit juice stall and can save the trouble of peeling a pineapple yourself.

1 cup plain flour 
1/8 teaspoon salt
1/4 cup unsalted cold butter
1 tablespoon lard ( I replaced with Crisco shortening)
2 tablespoon cold water

Mix the flour, salt,cut in the cold butter n shortening till you get crumb like texture.
Add in the water gradually n form a dough.
Sprinkle flour on the work surface  and roll out dough into a circle. Place on the tart pan. Prick the base of the pie crust.
There may be excess which you can use to form a lattice pattern.
This dough is only enough for a 6 inch diameter tart pan.

Pineapple filling recipe from Cooks.com
Mine is a reduced size filling.

3 tablespoon corn flour
1/8 teaspoon salt
1 cup boiling water
1/2 cup caster sugar 
1 beaten egg yolk
1 tablespoon lemon juice
About 1 cup of pineapple chunks

Cook the corn flour, salt, sugar n water till thicken. Remove from fire.
If lumps form, strain the mixture with a sieve.
Add in the egg n lemon juice n pineapples n stir together.
Pour into the pie crust.

Stir in pineapple to corn flour mix 

Decorate with a few slices of strawberry (optional).

Bake in preheated oven 180 degree celcius oven for 25 minutes till pineapple filling sets.



Serves 4 small portions.

Dried Blueberry and Grated Cheese Muffins


I wanted to do something  and looked for a cheese muffin recipe on the web.These are pretty easy to do but it was messy. Be prepared to get your fingers dirty!

I have did some slight changes. 

Ingredients
2 cups of plain flour n 1 tablespoon flour
1/8 teaspoon salt ( original 1 teaspoon)
2 teaspoons of double acting baking powder ( original 3 teaspoon baking powder)
200 gm Planta margarine (8oz margarine)
1 cup cheese - I interpret as grated cheese

Wet ingredients at room temperature
1 cup milk 
2 eggs

Topping
Some grated cheese
Handful of blueberries - my addition
Original used some paprika



Method
Mix the flour n baking powder n 1/8 teaspoon salt together 
Rub in the margarine into the flour - will be messy!
Add in the cheese n stir with spatula

Beat 2 eggs in another bowl.
Add in milk n stir. 
Pour the milk mix into the flour n mix in with spatula.
At this point I sprinkled about one more tablespoon flour as the mixture was very wet.
Preheat oven to 190 deg celcius - original is 200.
Spoon into prepared muffin trays.
I lined with paper cups.
Add more grated cheese n put some blueberries.
Bake for about 15 mins
I turned my trays n lowered temp to 170 for another 10 mins.
You can test doneness by sticking a toothpick in. It should be dry when pull out.
Let them rest in tray 2 mins.
Remove n cool in racks. 
Sprinkle a little caster sugar on them before serving.
