Apple Fritters

These are so delicious I made them twice  over 2 days!

Recipe
Ingredients 
Cake flour 1.5 cups 
I changed this to 1/3 cup bread flour and 1 n 1/4 cups plain flour
1/4 teaspoon salt
2 teaspoon baking powder
1/4 cup caster sugar 
1/2 tsp cinnamon powder
Mix all the above in a bowl n set aside

Use another bowl n mix in the following
2/3 cup milk
1 egg
2 tablespoon melted unsalted butter
 (roughly around 33gm)

Peel and dice one Fuji apple

Add the wet into the dry ingredients
Mix with spatula 
Add in the diced apple
Mix well

Heat the oil  - I used my Meyer deep fryer and set temp to 5
If you use a wok, test the temp by sticking the end of wooden spoon into base of wok
The oil is hot enough if you see bubbles form at end of spoon

Prepare a tray with kitchen paper towels

Use an ice cream scoop n scoop half a scoop of the batter n lower into oil
Fry about 8 pcs at a time 
Turn them in the oil to try and achieve brown all over
When golden brown all over, remove n drain oil on paper towels 
When cooler, remove and place on plate.
Sprinkle some icing sugar over them and serve still warm

Scoop half a scoop


Frying 

Drain on paper towels

Ready to eat 
Crispy exterior n soft interior with crunchy apple

Chinese Soy Sauce Chicken

 

This is a delicious and easy dish to make - Soy Sauce Chicken

I followed a recipe from Daydaycook.com


This is also the first time I cooked a whole chicken in a wok. It turned out great n I am very pleased with it.
I only changed the method by frying ginger n spring onion n added a stick of cinnamon.

Recipe
Ingredients
1 whole chicken - I bought a kampung chicken from the wet market 
Some spring onions cut into about 2 inch lengths 
About 6-7 slices of ginger 
A little oil for frying
Chinese Dark soy sauce 100 ml ( I used Tai Hua brand)
Water 2 cups
Rock sugar about 2 medium pcs chopped smaller size easier to dissolve
1 pc of cinnamon stick
Some coarse salt to clean chicken 

Method
For the chicken - clean the chicken remove the insides n rub salt into cavity .
I also chopped away the neck n the backside and the feet.
Wash away the salt n drain the water away.
Slice some ginger n chop the spring onions.
Heat the wok with a little oil.
Fry the ginger till fragrant n add in spring onions n fry a very short while.
Add in the water, dark sauce and rock sugar and the cinnamon.
When the water boils n all the sugar has dissolved
Place the chicken in carefully.
Then turn the chicken over to make sure the chicken is covered with the sauce .
Cover the wok n turn fire to medium high.
Cook for 20 minutes.
Uncover the wok n ladle the sauce over the chicken about 10 minutes. Please turn to low heat now.
The sauce will thicken and it will also decrease.
Remove on chopping board n wait another 10 minutes before cutting.
Ladle the remaining sauce into a bowl to spoon over the chicken or rice.

Crispy Shredded Crabstick

Chinese New Year is coming soon and I see the New Year goodies up for sales in the supermarket.

I remembered eating this treat from a relative a few years ago and decided to try it myself.

Recipe
Ingredients 
Imitation crab sticks 
Some plain flour 
Oil for frying

Method
First unroll the crabstick n shred them using your fingers to feel n peel out strand by strand
I laid them on a paper towel 
Heat some oil - enough for deep frying
Coat the strands in plain flour
Fry them in batches till golden brown
Use a paper towel to absorb the oil
Keep in airtight container. 

Note : I tried without plain flour but unable to achieve crispyness

Shredding the crabstick

Frying in hot oil


Drain on paper towel

King Oyster Mushroom stirfry




Well today I went to the supermarket and saw the king oyster mushrooms were on sale and decided to get a pkt. It costs me $1.85 for a pkt of 200gm

I quickly googled for recipe and this simple recipe came up. I changed it slightly by using cherry tomatoes n stirfry with the mushrooms.

Recipe
King Oyster Mushrooms
Some olive oil
Some unsalted butter
1 garlic sliced
Some salt
Some cherry tomatoes halved

Cut the mushrooms into thick slices. Discard the lower ends of stem which may be hard or dirty.
Heat some oil & fry garlic till fragrant n discard the garlic.
Cut some butter in n let the butter bubble. When bubbling goes down, place all the mushroom onto the pan.
Brown them for about 6 minutes n flip over to brown the other side.
Put some cherry tomatoes into 
the pan n cook. 
Sprinkle some salt into the mushrooms.
Serve
