Lemon Butter Cake


The cake is soft n the top has lemony taste.

I used my silicon cake pan but I still lined it and lifted it up easily to cool after baking.

Recipe
cake 
100 gm SCS unsalted butter softened
25 gm Planta margarine
100 gm caster sugar
1/8 tsp salt 
2 eggs
4 tbsp milk
175 gm self raising flour
1 lemon rind grated finely

Syrup
1 lemon juice
3 tbsp caster sugar
1 lemon rind grated finely

Method
Beat the butter, margarine and sugar till fluffy
Add the eggs in one at a time n beat well 
Add in the lemon rind n beat in
Mix the flour and salt together 
Fold in the flour n milk
Line a loaf tin and put batter in
Preheat oven to 180 C
Bake for 40 minutes
I tented with a piece of aluminium foil at about 30 minutes and continued baking 

While cake is baking, boil the lemon juice n 3 tbsp caster sugar till sugar melts.
Then stir in the lemon rind n set aside.

Poke holes into the cake after baking.
Pour the lemon syrup over the cake. 
Give it 5 minutes to let the syrup absorb into cake 
Lift up the cake and cool on the rack

Note
You will have balance 1 lemon without rind.
I sliced it and made honey lemon drink with it

Pan of Brownies

This is a wonderfully tasty brownie recipe which comes from Linda Stephen's the convection oven bible.


I do hope I have time to try out other recipes inside. I did not use the cup measurements inside her recipe but used in grams.

The recipe as follows
250 gm unsalted SCS butter cut into pcs
250 gm semisweet chocolate - I used baking chocolate n dark couverture chocolate 
250 gm plain flour
1 tsp baking powder
1/4 tsp salt
1 tsp instant coffee powder - optional - I omitted
250 gm walnuts chopped ( I used only about 150gm)
4 eggs
250 gm caster sugar
125 gm packed brown sugar
1 tsp vanilla
375 gm semisweet or white chocolate chips or peanut butter chips
I just sprinkled peanut butter chips and didn't measure

Method
1. In a stainless steel bowl set over simmering water, melt the butter n chocolate and stir together. Cool slightly.

2. In a bowl, combine flour, baking powder, salt, coffee(optional) n nuts 

3. In a separate bowl, beat together eggs, sugars n vanilla. I used an electric beater. 
Stir in the cooled chocolate mixture. Stir in the flour. I used a spatula.

4. Pour batter into a greased n lined 13 x 9 inch baking pan. Sprinkle with the peanut butter chips.
Preheat oven to 160c or 325f. Bake for 25 to 30 mins. I used 40 mins. Bake until a tester or toothpick comes out clean.
Let cool in pan on a wire rack.

Note
Please line the pan with the two ends of paper sticking out so you can lift up the brownie gently n cut it

Steamed Egg


Yesterday was my helper's off day and again I was the part time chef 

Made a 4 dish dinner and steamed egg was one dish 

Recipe
2 eggs
Water 
Milk
Kikkoman soy sauce
Sesame oil 
Chopped spring onions

Break 2 eggs into bowl
Use the half egg shell n measure 1.5 egg shells of water add to egg
Measure half egg shell of milk add to egg
Add in 1 tsp Kikkoman soy sauce 
Mix together n strain into steaming bowl
Wait till water boils in the wok
Place a wire rack n the water
Place the bowl of egg on it
Do not let water touch base of bowl
Cover the wok but leave a small gap
Steam till the egg sets
There will be a little water gathered in the middle of the steamed egg
Pour that water away
Drizzle a little sesame oil or cooked oil m add chopped spring onions 
You can also drizzle a little more soy sauce on the egg before serving

Cinnamon Rolls



These cinnamon rolls are my most successful batch and the recipe is from 
Fun at Sassy's Kitchen 
With some modifications 

What I did were 2 kinds of chocolate chip cinnamon rolls.
One simple roll and the other with a vanilla milk glaze topped with toasted flaked almonds.

I wanted to use raisins but my girl wanted chips instead. 

Recipe 
Ingredients


Melted 50 gm butter use the microwave say 20 seconds

Using the dough hook best slow speed for ten minutes

Oil the bowl n turn the dough once before use a damp cloth to cover m Ket rise in a warmed oven

I punched down though original recipe did not

Roll out to rectangle 40cm by 30cm

Brush with melted butter

Sprinkle the sugar cinnamon mixture in
Add chocolate chips as desired but cover only 3/4

Roll in as tightly as possible

Rolled up

Cut n lay on lined trays n brush top with melted butter. You can dab the end with butter n press it to seal the roll properly

Done! Remove to rack to cool

Taste best slightly warm

Frosting tasted like white chocolate!

Leave the frosting to set

Peach Cake




Original recipe by KS Lee
Apricot n Pineapple cake 

150gm butter ( I used unsalted n softened)
120gm caster sugar 
3 eggs

100 gm self raising flour 
120 gm high protein flour ( I interpret as bread flour)

Fruits 
1/2 pc canned apricot n 2 slices canned pineapple cut into cubes
I replaced with 4 small pcs of peach cut into cubes

Beat the butter n sugar till fluffy
Add eggs one at a time n combine well before adding next egg 
Slowly fold in B n mix well 
Lastly add in fruit n mix well 
Pour into 7" by 7" by 3 " baking mould
( I grease n floured)
Bake at 170 deg for 45 minutes. I used only 35 mins

Batter with fruits

4 small slices cut

Pour into greased n floured tin

Cooling

Cut to slices 

Very good texture. A bit crispy crust n inside is soft.

Romancing U 2015

Once again my husband and I joined the Romancing U 2015 organized by NTUC U family for a date night under the stars.
This time it was under the rain too!
The event is held at Fort Canning Green. I remembered going there a few years back and it rained as well even when the event just started.

Anyway it was an enjoyable time before the rain came down. We took a photo, had a mocktail n even participated in a game onstage. Sadly as the rain was so heavy we made a retreat home and missed Hossan Leong's performance.
I applaud those who stuck it out for an hour for the rain to stop. Some photos at the event.
