Lemon Cupakes with Dried Fruits and Lemon Curd topping

Recipe adapted from Ann Nicol Cupcakes & Muffins

Lemon Cupcake ingredients
125 gm caster sugar
125g unsalted butter softened - original soft tub margarine
2 medium eggs
125 g self raising flour
1/2 tsp baking powder
1 tsp lemon juice
I also added lemon zest 1/2 tsp
I also added a tablespoon of milk.

Method
Preheat the oven to 190 deg celcius
Line the muffin tray with 12 paper cases.
Place all the cupcake ingredients in a large bowl and beat with an electric mixer for about 2 minutes until smooth.
Bake at about 18 minutes until firm risen and golden. Let sit in muffin tray about 1 minute and remove onto the wire rack to cool.

Make the lemon curd and spread on cupcakes when the lemon curd is cooled.
Top with some mixed fruit.

Lemon curd recipe from Joyofbaking.com.

Lemon Curd ingredients
3 large eggs - beaten
3/4 cup or 150gm granulated white sugar (I used caster sugar)
1/3 cup or 80ml fresh lemon juice (2 lemons)
56 grams unsalted butter at room temperature - cut into cubes
1 tablespoon lemon zest

Method

Place a stainless steel bowl over a saucepan of simmering water, whisk together the eggs, sugar and lemon juice till blended.
Whisk constantly to prevent curdling of the eggs, until mixture becomes pale in colour and quite thick. About 10 minutes.
Remove form heat and pour through a fine strainer to remove any lumps.
Put in the cut butter and whisk with spatula till butter melted. Add in the lemon zest and cover the surface of the lemon curd to prevent a skin from forming.
When cooled, use it to spread.

There will be balance of lemon curd. I used it to spread on another batch of cupcakes and put fondant flowers on them.

The balance lemon curd can be kept in the fridge up to a week. You can use them to make fruit tarts.

I also have used the remaining lemon curd to use as filling on sweet pastry cookies. Please read my next post.

Enjoy baking!

Orange Cupcakes with Orange Frosting

This continues my dessert making with fruits.
I have three large oranges Outspan from South Africa sitting at home and my girl rejected drinking the juice because it tastes different from the carton ones... sigh... they will not be wasted if I can use them somehow in baking.

Flipping through Cupcakes with Attitude, I found Gold Rush Cupcakes which used the juice of  half an orange in the cupcake. I decided to do an orange frosting as well with the juice of the other half orange.

These are really large and juicy oranges. When I sliced open, they are red and not orange. But the juice I squeezed out is light orange.

Cupcake Ingredients you need
Unsalted butter 125g
Caster sugar 125 g
Eggs 2 lightly beaten
Orange oil 1 tsp or orange essential oil 5 drops (omitted)
Orange juice from 1/2 orange
Orange zest grated from 1/2 orange (I used 1 whole orange)
Self raising flour 125 g
Orange liquer (Grand marnier) (omitted) 2 tbsp and more for drizzling

I added a few drops of Bake King orange paste and also a little vanilla essence.

Method
1. Preheat oven to 180C. Line the muffin tray with cupcake liners.
2. Cream butter using my handheld electric whisk for a few minutes. Gradually add sugar and continue to beat till well combined.
3.  Add eggs and beat until mixture is well blended, light and fluffy.
4. Add orange paste, vanilla essence, juice and zest. Mix well.
5. Add flour and continue to beat until well mixed. Stop immediately when all flour has been mixed well into the batter. (add orange liquer if you have at here)
6. Spoon batter into cupcake liners 3/4 full. Bake for 20-25 minutes. Remove from oven and let cupcakes sit in muffin tray 5 minutes.
7. Remove cupcakes from tray and let cool on rack before frosting.

If you have orange liqueur, now pierce the cupcakes with several holes while still warm and drizzle the orange liqueur.  Cool and then frost.

Orange Frosting
Vegetable shortening 150g (I used Crisco)
Orange paste
Icing sugar 150g sifted
Orange Juice 3 tablespoon

Method
1.  Beat the vegetable shortening  in an electric mixer for about 2-3 minutes on medium speed.
2. Add orange paste and continue beating.
3. Add icing sugar and continue beating - I added 1/3 at a time in case the sugar flies out. Beat till well combined.
4. Gradually add 1 tablespoon of orange juice to achieve desired consistency.
5. Use a piping bag and star tip to add frosting to the cupcakes.
6. If you find it hard to pipe, just store in the fridge 15 minutes and then use the frosting.

Cooling my cupcakes on rack

Pipe them differently for a more interesting display. I also added orange sugar on some and drizzled melted chocolate.

Cupcakes are soft, and the frosting a slight orange taste. Make them soon and enjoy!

Celebrating with food

Today we celebrated a good friend's birthday and we are so full of good stuff. I have to share these food photos with everyone.

We had good Spanish food at Sabio by the Sea at Sentosa Cove.  The place is just next to the sea. You see boats, feel the nice sea breeze.  Food is wonderful and here are the pictures.

Sausages

Croquette with cheese

Scallops in sauce

Potato and egg

Pork
Paella with meat
The light meal for 4 persons cost just below $200.  The food was served quickly.

Here is a picture of us holding our Sangria drinks

For desserts, we had my red velvet cupcakes with lemon cheese frosting and salted caramel.

I think I have finally succeeded in making a rose with the frosting.  The one with the hearts is for my birthday girl.

Next stop we had more sausages, this time at Brotzeit German Bier Bar & Restaurant at Vivo City.

This is an assortment - including spicy chicken, curry, cheese and served with salad.

These skinny fries are really delish with some spices on them

Different sauces for our food

Cooling down with beer!
I had a 300ml beer with lemonade - on the sweet side.

We had a wonderful time.
Hope that we can spend more time together like this!

Recipe for the lemon cream cheese frosting
- original recipe is from Cupcakes with attitude by Benjamin Wong

Cream Cheese 500 g at room temperature ( I use 450g cream cheese n unsalted butter 50g)
Icing Sugar 8 tbsp. sifted
Lemon juice from 1 lemon - can use less if you prefer less sour taste
Remove lemon juice and replace with 1.5 tsp vanilla if preferred.
Coloured paste if you want coloured frosting.

1. Combine cream cheese, unsalted butter and vanilla extract in a mixer with a paddle attachment.  Beat at high speed for 3 minutes or until soft and fluffy.
2.  Add icing sugar and beat at low speed until everything is well blended.  Do not overbeat as the cream cheese can become grainy.
3. Add colour paste to frosting if desired and beat till well combined.

Note :
Recommended to chill before use which I did.
Cover with cling wrap and can keep up to a week.
Before using, remove from the fridge and let it thaw to room temperature.  Whisk with a fork before using.
To make the rose pattern - use the Wilton 1M star tip.

Cupcakes

Two choices - Kiwi or Nutella frosting?

This Kiwi glaze recipe comes from Benjamin Wong's cook Cupcake with Attitude.  Available at Popular and Prologue bookstores.

Assorted chocolate cupcake with Nutella Frosting

Personally I prefer the Kiwi Glaza - I used golden kiwis instead of green kiwi.  The Nutella frosting was a bit too sweet for me.  Will adjust again next time I bake.

So which would you choose?
