Salted egg yolk cookies with bak kwa

I first read the recipe from this blog


I then doubled the recipe but I used only 4 salted egg yolks. I also managed to make using only 1/4 tsp baking powder and omitted baking soda.

I also changed by adding bak kwa bits to the middle .

Ingredients
4 salted egg yolks cooked and mashed
Unsalted butter 190 gm softened 
Caster sugar 80 gm
Salt 1/4 tsp
Plain flour 250 gm
Corn flour 20 gm 
1 tablespoon milk powder
Baking powder 1/4 tsp
Bak kwa bits 
Roasted sesame seeds ( white or black)
1 egg for egg wash
Cookie mold for making cookies.

Firstly steam the 4 salted egg yolks for about 5-7 minutes. I didn't reserve the egg white but threw away.
Then mash them. I removed some hard bits. Set aside.

Cream the butter and sugar with electric beater till sugar is dissolved.

Then add in the salted egg yolks.
Sift the flours and milk powder and salt and add into the butter mixture.
Then mix together with electric beater for a very short while. Then I knead with hands till it forms a dough. 

I find the dough just nice and there is no need to refrigerate.

Line your trays with baking paper.

Take a large piece of baking paper and fold into 2.

Put some dough between n roll out dough to about 5mm.

Use your cookie dough to cut out eg stars or flower shape.

Place on the lined tray. I placed about 12 pcs before I egg washed.
Then I sprinkled sesame seeds on the cookies and place a bak kwa bit in the centre.

Preheat oven to 150 Celsius. Bake for 15 minutes.

Do watch the cookies properly. You want to achieve a golden colour.

Oven temperatures vary for different brands. The second batch when I bake have to use slightly shorter time as oven is already hot.

Keep the cookies in an airtight container after cooling them.

They taste slightly salty and smell very nice!

Chinese sausage lunch

Finally took a day of leave  to clear my home . Spring cleaning is part of Chinese New Year. Remove the old stuff and receive the new!

My friend reminded me I should get some sausages for Chinese New Year. I bought a packet yesterday and they look so good I can't resist cooking one piece today before Chinese New Year!

This is one method to prepare them . There may be other ways.

Remove one sausage from the packet n tie the rest up n seal properly and store in fridge .
Cut both ends of the sausage and peel off the casing.
Then slice into thin slices and place in a melanin bowl.
Wash 1 cup of rice and add in 1 cup of water into your rice cooker.
Place the bowl of sausage into the rice cooker.
Cook the rice with the sausage.
Serve your sausage on rice with a fried egg. 
You can add some vegetables for a more wholesome meal.

San Remo romantic dinner cruise

I had a wonderful dinner cruise on a yacht on Saturday and I wish to share this experience . And of course there is great food served on board cooked by Chef Melvyn, ambassador for San Remo.


I won this trip along with 2 couples after purchasing some San Remo products 

The trip starts from One 15 Marina Club
where the yacht Ximula is berthed there.

We are welcomed aboard by Natalie, from Alphico Marketing Pte Ltd.
On board we removed our shoes and are shown around.

Chef Melvyn and his team are already busy preparing our dinner which he has specially planned for.


We enjoyed champagne on the deck in the sunny afternoon skies ( with some dark clouds) and a briefing done by Ximula crew and a welcome by Chef Melvyn.

We had time for fun before dinner at 7pm
So most of us gamely went into sea after donning our life jackets. We used the kayaks and paddle boards.

Soon the sun set and we were seated after the tables were transformed


Wine was served to compliment the delectable dishes prepared by Chef Melvyn and his team . We understood it wasn't easy cooking on choppy waters.


San Remo has thoughtfully allowed us to choose what we wanted to eat and Chef Melvyn came to explain to us how some of his food were prepared and he used the freshest ingredients. Let the pictures speak for themselves.

Hubby - Sweet lobster and fresh tomato - juice bursting in your mouth served with Sam Remo Linguine


My slow braised beef in wine reduction - so tender and flavorful served with San Remo penne.

It was sweet but not cloying and Chef Melvyn used honey and melted chocolate for this dish

Fried bread toasts with egg yolks

It is my first post for 2016. Happy New Year!!


This is not my first dish of food but think this is nice to eat so I decided to jot it down

I had leftover egg yolks after making some sesame crisps and didn't want to waste the yolks. So I decided to stir fry the yolks.

Ingredients 
3 pcs of bread slices to cubes
Oil for frying 

Egg yolk mix
3 egg yolks
Milk about a tablespoon
Ketchup about a teaspoon
Soy sauce a teaspoon
Stir all together

Salt
Additional ketchup for drizzling 

Method
Prepare the yolk mixture n set aside
Cut up the bread
Pour a little oil on frying pan
After heating the pan, fry the bread on both sides 
The oil will be absorbed by the bread
Add a little more oil and add the egg yolk mixture 
Try to coat the bread with the egg yolk mix
After frying till egg yolks cooked 
Sprinkle a little salt and mix in
Dish up and drizzle ketchup 
Serve


It looks like our Chinese dish called Chai tow kueh or fried carrot cake
