Cheese and Bacon Potato Gratin


This is a dish for potato lovers
I used up 4 russet potatoes and a few slices of bacon in there. It is aromatic and I like the flavour.

I omitted the white mushrooms n flaked almonds and for cheddar cheese I replaced with pizza plus shredded cheese from Perfect Italiano.

Through the same link you can find Jamie Oliver's  festive potato bake .

4 large russet potatoes, some bacon , whipping cream cooked with garlic.

I find that it's a huge serving 

We just ate for fun but I kept the balance and brought it to work for my lunch the next day . Just wrap in aluminum foil n heat it up.

Begedil or Potato Patties Malay style



I must thank my friend Isliza for sharing her Begedil recipe with me.

These are so tasty and doesn't need much ingredients to make.

Ingredients 
A few potatoes 
Minced beef
Some chopped onion
Salt 
White Pepper 
Chinese parsley
Egg beaten
Oil for frying

First marinate some minced beef with a little salt
Panfry with chopped onions n keep aside

Prepare some diced finely Chinese parsley leaves
Boil some peeled potatoes - cut to similar size for even cooking
When potatoes still warm mash them n add in pepper salt chopped parsley n minced beef.
Form into patties n keep in fridge. Use a clingwrap to cover them n keep chilled for at least 30 mins.
Beat an egg into a plate.
Heat some oil in wok. 
Dip the potato patties in egg evenly n fry them over low heat.
Serve with your favourite chilli dip.

Potato Soup

Tasty n easy to make potato soup



Peel 2 large russet potatoes n cut into even slices not too thick.
Slice one onion. 
Cut some brown mushrooms. 
Boil about 2 cups of water. 
Fry n chop some back bacon. 
Cut up spring onions. 
Brown butter 40gm slightly n add in the onions. Fry till a bit soft. 
Add on the mushroom n potato slices n fry till a bit translucent . 
Throw in a tablespoon of flour n stir fry . Add in 2 cups of boiling water n sprinkle some salt n dried parsley n black pepper.
Boil about 5 minutes add in 1/2 cup milk n boil about 20 minutes. 
Use your wooden spoon to break the potatoes a bit. 
Add in some grated cheese n stir. 
Serve with chopped bacon n spring onions.

Add in the water n parsley n salt n black pepper n boil.

Add in milk n boil for another 20 mins or till thickened

Baked potato pie

Potato pie with mixed grated cheese toppings. Using recipe from Baked cookbook.Boil 2 large potatoes about 220gm each n cut into cubes. Prepare red green n yellow capsicums n diced without seeds. Dice 1 large peeled onion. 3 egg whites. 300 ml unsweetened soy milk. Plain flour 180 gm. Baking powder 1 tsp. Salt 1/4 tsp. In my opinion can increase the salt.


Method

Grease 2 pie trays diameter size 6 inch.

Layer with potatoes then chopped onions then capsicums n sprinkle salt. 

Mix soy milk with egg whites. Add in sifted flour n baking powder in batches n use a wooden spatula to blend till smooth. 

Pour over the two trays.

Bake at 200 c or 400 f for 30 minutes. Cool slightly before serving.


In addition , I also topped with grated mixed cheese at 20 minutes of baking and when done the top is golden brown.

The capsicums offer sweetness to the pie.

I would increase salt or add some fried bacon in the next time to increase the savory taste.
