Honey Cake


This light textured as spongy honey cake recipe is from Pooh's Yummy Cookbook.

It is a simple recipe using 5 ingredients.
Well, 6 if you include some butter to grease the cake tin.

Recipe
3 eggs
80 gm sugar ( I used caster sugar)
90 gm self raising flour
6 teaspoons of honey 
1 pinch of salt 

Method 
Prepare 2 mixing bowls
Separate the egg yolks from the whites into the bowls.
Add the sugar and honey into the yolks n use an electric beater n beat well 
Mix in the flour spoon by spoon - I beat in with the electric mixer

Wash clean your beaters n dry them
Add a pinch of salt into the egg whites and whisk until stiff
Fold the egg whites into the egg yolk mixture
Preheat the oven to 180 deg celcius ( I used 170)
Grease a loaf tin or a round tin 
Pour into the cake tin and bake for 30 minutes 
I tented the cake with aluminum foil halfway at 15 minutes.
Remove and cook on wire rack.
Cut into 1 inch thickness n serve

Fried Taukwa with Honey Peanut


I created this recipe with inspiration from a local dish called Rojak which uses prawn sauce and peanuts. I opted to make a sweet version instead.

Ingredients
1 pc of tau kwa extra firm tofu
Honey
1 tablespoon fine sugar
2 tablespoon of crushed peanut
Cornflour
Some cooking oil

Method
Cut a piece of tau kwa into 12 pcs.
Make sure you dry tau kwa.
Coat with corn flour n fry till golden brown.
Set aside on plate.
Mix 2 tablespoon of crushed peanuts with one tablespoon of fine sugar.
Drizzle honey onto tofu .
Scatter sugar peanuts on top n serve.


After frying - absorb oil using kitchen paper towels.


Drizzle honey - I love orange blossom honey.


Mix 1 tablespoon of sugar with 2 tablespoon of crushed peanuts

Plate it and serve! You can also serve with your own sambal chilli if you prefer a spicier dish.

Honey Rice Krispies and Cornflake Cups

 
 
With Hari Raya, just around the corner, I could not help but think of all the goodies my neighbor used to give me including the cornflake cups.  So I went to try the recipe from Noobcook blog. Last year I tried but failed to do it properly and got stuck to the cups.  This year I am so glad to have succeeded and I made 2 versions.

Kindly refer to original recipe from above link. You can use crushed cornflakes or replace with a box of  Rice Krispies 130gm

Ingredients

2 tbsp honey

50gm unsalted butter

150 gm cornflakes (crushed to smaller pcs) or 1 box of Rice Krispies 130gm (no need to crush)

Coloured sprinkles

 

Method

1.       Prepare a baking tray with at least 60-70 pcs of mini baking cases.

2.       Crush your cornflakes. Or  if using Rice Krispies – no need to crush.

3.       In a saucepan or small pot, place the honey and butter. Melt over gentle heat until mixture is frothy. You will see many bubbles.

4.       Remove from fire and add the Rice Krispies or cornflakes into the honey butter mixture and coat them evenly.

5.       Spoon using a teaspoon into the mini baking cases and sprinkle coloured sprinkles.

6.       Bake at preheated oven of 150 degree celcius for 10-12 minutes or until the cornflakes or rice krispies turn  a darker shade of golden. Once cooled, store inside an airtight container.

Honey butter mixture is frothy.  Then add the cornflakes or rice krispies.
 

After baking - golden coloured and so yummy!
