Prawn Fritters

I feel I I should share this as the prawn fritters are awesome! No need to buy flour mix anymore!

Please refer to Hedy Khoo's recipe
The link is here

I did with about 170 gm of Large prawns bought from Ntuc Fairprice supermarket (weight after heads n shells removed) which was about 19 prawns.

Bought this type of prawns didn't use all

The batter was half her recipe
For consistency of batter I used 100 ml water plus 2 tablespoon water
You have to experiment your own my batter is a bit thick and clings to the prawns so it doesn't drop while transferring to the wok

Frying in the oil

The fritters were tasty on thier own but I also added a side dish of Thousand Island Sauce dressing

Puffed up

Cross section

Enjoy!!

Garlic Butter Prawns

These prawns were oven roasted using garlic butter. The recipe is from Deliaonline the link is here

I only found it troublesome to remove all the shells and heads and the 'intestines ' of the tiger prawns.

I bought only 8 pcs and they came up to $8.44. I bought them from Sheng Shiong but you can purchase these at any wet market or supermarket.

I omitted serving with parsley as I didn't purchase any fresh herbs, I used dried parsley for seasoning.

Recipe was for 20 prawns but mine was only half portion

Remove the head and the shell of prawns leaving the tail.
Slit the prawn on its back and remove the intestine.
Wash n dry with paper towels and set aside.

Prepare the seasoning
Crush 2 pcs of garlic
Use about 30 gm unsalted butter - softened
1/2 tbsp dried parsley ( use fresh if you have)
Grate 1/2 lemon zest and juice
Some salt and black pepper.
Mix all the above n apply to the prawns.
Place them on a buttered tray or baking dish.

Pre heat oven to 220 deg celcius.

Place in top shelf and cook for 5 minutes if using a tray and 6-7 minutes if using the dish.

My prawns didn't spread out flat but sort of curled up

Serve with lemon slices and sprinkled with parsley.

Enjoy!!

Cereal Prawns

First time cooking this dish - Cereal Prawns for Father's Day celebration!

It was a last minute decision, so I had to use instant cereal prawn mix

Ingredients you will need are prawns 400 - 500 gm , I used XL grey prawns. Remove the legs and slit the back to remove the vein.  Some curry leaves and 5 egg yolks. You also need to have some Planta margarine.

Cook Prawns with some oil till cooked.

Discard the oil and heat up 4 tablespoon of margarine. When melted, add in the egg yolks and stir fry till cooked. Please use your spatula to chop them up.

After cooking, strain your egg yolks. Set aside.

Wipe away most of the melted margarine, and add in 10 curry leaves.  Stir fry a little while.

Add in the cereal mix and fry quickly till fragrant. Use low fire because cereal will get burnt.

Add in your prawns and eggs and mix evenly.  Serve hot.

Cereal prawns for a hardworking Daddy! Happy Father's Day!

Happy Cooking!
