Chocolate chocolate chips muffins

Wonderful chocolate flavour - your kids will love them!


I used the recipe from Nigella Lawson.

No need to use any hand whisk just my spatula to mix n fold in.

Recipe 
Dry ingredients
1 n 3/4 cup plain flour
2 tsp baking powder
1/2 tsp baking soda
2 tbsp Hershey's cocoa powder
3/4 cup caster sugar
3/4 semi sweet mini chocolate chips
Mix all the above in a large mixing bowl
Standby 1/4 cup of chocolate chips to sprinkle on muffins before baking 

Next wet ingredients 
1 room temp egg
1 teaspoon vanilla
1 cup n 2 tsp veg oil - I used canola oil
1 cup of milk room temp
Mix all these in a measuring jug ( good idea)

Pour the wet into the dry - do not over mix. Slightly lumpy with flour mix in cannot see any more white.

Preheat oven to 180 degree celcius 
Line 12 hole muffin trays with paper cases.
Use a icecream scoop to fill the muffin cases.
Sprinkle the additional chips on surface before baking.
20 mins should be enough.
Remove from oven n let sit for about 2 minutes.
Remove to rack n cool completely.
The chips are very hot on the surface.
I recommend to use a tissue to touch the surface when lifting out the muffins.
