Winning dish in 2011 - Baked fish with kiwis (photo taken under yellow lighting)
I would like to share a bit of my cooking history from year 2011. I was getting pretty active in facebook and entered a contest organised by TheAsianParents and Zespri.
There were 5 teams competing during the event. Each team consisted of a parent and their child.
We donned on our chef's hats and aprons and went through a training session by the Chef Wendy at AFC studio and prepared 3 dishes including your original kiwi dish.
We learnt to cook Trifle cake with assorted fruits in a glass, served prawn cocktail with kiwis
and lastly my baked fish served with Green and Golden kiwis.

Recipe for the baked fish
Ingredients
1 piece of halibut sole fish from Fairprice - remove any bones
1/4 of a red pepper (capsicum) seeds removed and diced.
2 pieces of garlic - minced
1/2 lime
1/4 large onion - remove skin and chop finely
1 Zespri gold kiwi remove skin and cut into half.
Use half the gold kiwi and cut into slices. Use the other half and cut into small cubes.
some mixed herbs - McCormick perfect pinch original all purpose seasoning.
a pinch of salt and black pepper.
1/2 green Zespri kiwi - cut into cubes
3 tablespoons of olive oil
Method
Preheat the oven to 200 degree celcius.
Wash the fish and dry it with paper towels.
Sprinkle black pepper on both sides of the fish and place on the aluminium foil.
Mix the oil with lime juice, minced garlic and some mixed herbs.
Spread the mixture onto both sides of the fish.
Top the upper side with red pepper, then the gold kiwi cubed, then chopped onions in this order.
Wrap the aluminium foil around the fish. Do not expose the fish.
Bake for 15 minutes.
Place the fish and sauce onto prepared plate with kiwi as garnishing.
Serve immediately.
